Hay Justin, what were those vegan resources I promised you? I remember us talking about it but I couldn't remember if it was actual recipes, or just acceptable substitutions for things, or vegan-friendly products that I buy and use, or vegan cooking sites, or what.
I suppose I could just post everything I have on vegan food and cooking, but man that would take a while and I'm lazy.
1 TBL olive or safflower oil 1/2 medium onion, chopped 2 bay leaves 1 TSP cumin 2 TBL dried oregano 1 TSP salt (optional) 2 stalks celery, chopped 2 bell peppers, chopped 5 cloves garlic, chopped 4 TBL salsa verde or 4 diced green chilies 12 oz. meat substitute of your choice (I like Gimme Lean soysage) 2 medium cans diced tomatoes, undrained 1 can tomato paste 1/8 cup chili powder with another 1/8 cup mix of paprika, cayenne, sage, red pepper flakes (this part is a little esoteric, I just wing it more often than not) 1 TBL black pepper 1 can kidney beans, drained 1 can garbanzo beans, drained 1 can black beans, undrained OPTIONAL: 1 can corn, drained
Assemble ingredients. In a big-ass saucepot on medium heat (biggest you have, this makes a TON of chili), heat the oil and sautee onions, bay, cumin, and oregano until onions are just about cooked. Add in the celery, peppers, verde/chilies, garlic and sautee that for a bit. Add in the soymeat stuff and make sure it's browned. Reduce heat to low and simmer for about 5 mins. Add in the tomatoes, chili powder mix, and black pepper. Stir in the beans. Bring the entire shebang to a boil and reduce the heat to low. Simmer 45 minutes. Turn off the heat, load up a bowl and eat it. Yum! Makes a ton of chili and lots of great leftovers.
OK...but from what? Like are you about to drown or something? Because I fully believe that even if you were about to drown, you would write a post that would go down in post-erity in a death is an art sort of way...and then drown...(tis a far better thing I do now than I have ever done)...if I misquoted Dickens it's only cos I never read the Tail of Two Cities.

Christina's Bangin' Vegan Chili
